Another day of not preparing for dinner, but thank goodness I have prepared my cabinets for times like this. I love Costco's canned chicken, so I always have that on hand to throw into mac n cheese or to make chicken salad with.. even to fry up with peppers and onions to make chicken tacos. I also make sure that I have a wide array of spices in my cabinet, and have learned to love cumin. I put cumin on my ground beef for tacos, in chili or this new soup I made.
Ingredients:
2 large cans of Chicken, drained (or you can boil 2-3 chicken breast in a pot with water and a lot of salt.. and shred after it is fully cooked)
1 can red beans drained and rinsed
1 can sweet corn, drained
1 can chicken broth
1 red pepper diced (or any pepper you have on hand)
1/2 pablano pepper diced
ground cuman
seasoning salt
** shredded cheese and sour cream
How to cook:
I usually drain everything in one large strainer on top of each other and the pour ingredients into large pot
pour chicken broth over everything
toss in all of the chopped peppers
cook on medium high and let simmer until beans, corn and peppers are softened
heavily season with cumin
and use seasoning salt to taste
** serve with cheese and sour cream
serves about 5-6
total prep and cook time = 30 minutes
I love having a hearty soup or chili when its so cold outside, not only are they easy to throw together but they are so comforting for these cold nights. I love coming up with new recipes, so when I was in a rush again tonight I just knew this would taste good and not to toot my own horn but this is Really Good.

Kind of sounds like my mom's "Chicken tortilla soup". Might have to try this recipe and see what she thinks. :)
I'm Mexican so I use cumin in most everything I cook. It's my go-to spice! This sounds like a great recipe.
