Pumpkin Cake Balls, Perfect for Thanksgiving!!



I have been to many parties where people serve cake balls. These little decedent little moist bites of yummyness are perfect. I try and tell myself it would help with portion control.... but then I grab another.. and another. Anyway, I to learn how to make them and was pleasantly surprised with how easy it truly was. Even better, I didn't just settle with a box cake, I actually made my mothers Pumpkin Cake by scratch.


Ingredients:
3 cups sugar
1 cup shortening
3 eggs beaten
1 can pumpkin
1 tsp vanilla
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
3 cups flour

1 container of cream cheese frosting

Amazing Glazes Frosting OR Candy Melt *brands are not specific, just attaching a link so you can see what I am talking about

*if you were making this into a cake you could add 1 cup pecans 

Cooking Directions:
In 1 bowl 
Cream sugar & Shortening together
Mix in Eggs, Pumpkin & Vanilla

In another bowl
mix together dry ingredients

Slowly mix dry ingredients into wet ingredients until mixed through. *batter will be thick

*This recipe is for a tube pan, if you are making as a regular cake bake in greased & floured tube pan at 350 for 1 hr 15 minutes *stop earlier and check with tooth pick. My oven cooks hot and fast for some reason so this would be too long for me. 


For Cake Balls: 
Bake at 350 for 45 minutes in regular cake pan greased. Check center of cake with tooth pick and if clean pull out of oven. Let cool.

Once cake is cooled completely, break it up with your hands and put crumbled cake into a large bowl. Mix in entire container of frosting and mix together thoroughly with your bare hands. (You will need to wash your hands several times through ball rolling process) After mixed together roll bite sized balls and place on a cookie sheet. Will make about 5-6 dozen. If it starts to get difficult to roll into ball form, wash hands.


Decorating:
I did not have Candy Melt at the house, so I used Amazing Glazes and followed microwave directions. I drizzled icing over top of the Pumpkin Cake Balls and then topped with festive sprinkles and / or a little bit of sugar/cinnamon mixture. Next time I make these I will get Candy Melt for sure.

Store In Refrigerator

I love cake balls and you are right, it doesn't help with portion control haha. LOVE the idea of pumpkin cake balls tho.

Thanks for posting! I have been wanting to make cake balls so bad, but haven't figured it out/had time yet. LOVE that it's pumpkin.. definitely going to have to make soon.. maybe for the next family birthday?
