I was going to share my dinner recipe for tonight and it ended up being a bust.. I saw this recipe from a friend on Facebook and thought it looked so yummy, so I am sharing it with you! If you try it out, let me know what you think.
Ashlye's Chicken Tortilla Soup
Ingredients:
Peppers *I used 1 jalapeno, 1 pablano, 2 ancient sweet and 1 bell*
3 Cups of black beans - drained
2 Cans of diced tomatoes
1 Can of corn - drained
3 Cloves of garlic, chopped thick and sauteed with onions
1/2 Large red onion, chopped and sauteed
2 Limes, 1 juiced and 1 sliced for serving
64 oz Can of chicken stock
Whole chicken- roasted and shredded *Can be purchased at most grocery stores already prepared*
1 Tablespoon Cumin
1 Tablespoon Cumin
1/2 Tablespoon Cayenne
Salt & Pepper
Roast the peppers, seed them and add to the blender with tomatoes, garlic and sauteed onions. Blend to desire (if you prefer chunky or not). Add to stock pot and add chicken broth, then add black beans, corn, cumin and cayenne. Season with salt and pepper to taste. After shredding the chicken add to soup. Simmer for about 1 hour, gently stirring.

I'm definitely going to have to try this! I don't do dairy and a lot of recipes for this kind of soup use cream or cheese as a main soup ingredient. I love it that this soup can stand alone and dairy can be an optional garnish. Thanks for posting it!

Thanks for this recipe. I'm going to make it. I might add some chopped cilantro and avocado slices on top. Think this will be a good warm soup for winter.
