OliveNation.Com: Blackberry Pancakes Recipe


I love trying new foods and recipes often, but I find that my local grocery stores don't always carry the items items I need to prepare the meal. When I came across OliveNation.com I was happy to have come across so many different things I would enjoy incorporating into my dishes, corn pasta, many different types of extracts, porcini mushrooms. I really enjoy they they have a recipes section on this site so I can not only get some great ingredients, but I can also find new ways of using them, like this one.

Blackberry Pancakes:
 
Ingredients:
• 2 eggs, separated
• 1 1/2 cups sifted all-purpose flour
• 2 1/4 teaspoons baking powder
• 3 tablespoons Maple Sugar
• 3/4 teaspoon Sale di Cervia Sea Salt
• 1 cup milk
• ½ teaspoon Pure Blackberry Extract
• 3 tablespoons melted butter
• 1 cup fresh or frozen thawed blackberries

Preparation:
In a small bowl, beat egg whites until stiff; set aside.
In a separate bowl, sift together flour, baking powder, Maple Sugar and Sale di Cervia Sea Salt. Beat egg yolks in a medium mixing bowl; add milk, Pure Blackberry Extract and melted butter. Stir egg mixture into dry ingredients; mix until batter is smooth and stir in blueberries. Fold in beaten egg whites. Bake on hot greased griddle. Use fresh or frozen blackberries as a garnish.

Makes 12 pancakes.
 


These sound so yummy, I can only imagine that the Pure Blackberry Extract is so very yummy. It's worth a try at least!
