Super Easy Meat Loaf! and Oh, So Yummy!


I remember being a kid and really disliking meatloaf, I really didn't like the flavor and texture of it. When, I became a mom, I never thought I would be making meatloaf and loving it, but I do. This is is so easy, you will for sure be adding it into your rotation.

Ingredients:
2-4 pounds of ground beef *think left overs*

1 box Chicken Stuffing *Stove Top or Betty Crocker, use half a box for 2 pounds of meat, full box for 4 pounds of meat*

1-3 eggs *egg is used to help things stick together, start with one egg while mixing. If the meat feels dry and hard to mix add another. For 4 pounds of meat you will need 3 eggs.

Ketchup

salt and pepper

1 cup of water

How To:
Heat oven to 350°
Place Meat and suggested amount of stuffing and eggs in a deep dish oven safe pan or baking dish and mix together thoroughly until stuffing is incorporated very well throughout the meat. If mixture seems dry, add another egg. For faster and more even cooking, break meat into two equal sections and put in 2 mounds. Cover two mounds with a layer of ketchup, salt and pepper the top. Add water around the base of the meat filling pan about 1 inch. Place on middle rack in oven for approximately 1 hour. Meat should be very firm, if you are unsure if it cooked thoroughly, cut meat in half at the thickest section and make sure it is not pink.
Mix meat thoroughly, so all of the stuffing seasonings are blended throughout each slice. 

After being cooked for 1 hour. I should have added a little more water to mine from the start, but it was still very moist and yummy.

(Quanda) I used beef left over from my Taco & Gordita's Dinner to make a meatloaf. It was quite tasteful. Thanks! :)
