I saw this while searching on Pinterest and decided to give it a try, wow, the ideas for toppings can be mixed around allowing for different meal ideas.
Last night I made chicken alfredo topped mushroom caps, and it was so good, but this really tasted so good I couldn't resist taking a picture and sharing this with all of you. My girls were having spaghetti for dinner, and since I am trying to make healthier choices for me and lose 20 pounds I decided to make my dinner lower calorie. I was really blown away and have decided that if I had to have just one meal every day of my life, this could easily be the one meal. Best of all, this is under 200 calories! OK, so here is how you make these lovely Mushroom Cap Pizzas!
Ingredients:
2 Portabella Mushroom Caps
1/4 Cup Spaghetti Sauce *I used Six Cheese Ragu and it was only 50 calories*
1/3 Cup Shredded Cheese *I used Weight Watchers Mexican Blend for just 80 calories*
Ground Turkey *cooked of course* use just enough to crumble on top
How To:
Preheat oven to 400°
Wipe mushrooms clean with dry paper towel to get the dirt off. Cut out the stem from the inside to make inside flat and scrape out the insides. *I don't scrape it out completely, because I like the entire mushroom* so it is your choice.
On oven safe pan, place dry mushroom caps topside down and bake for about 7-9 minutes.
Remove from oven and turn oven to broil setting
Evenly distribute the sauce into the caps and top with the cheese.
crumble cooked ground turkey on top and sprinkle a very little bit of garlic salt on both caps.
Broil for about 7-9 minutes or until cheese is melty.
Let cool and eat! This was so good that I did not even care that I wasn't eating the spaghetti and it will be good for when I am wanting pizza as well.

Still wanting to try this! If only my kids would eat mushrooms! (And my husband, too, for that matter!) it looks awesome!
